Donut in the making

Junior designs baked good for local bakery

Junior Campbell Macy stands holding a box of the donuts that she designed. On the top of the box, there is a donut with red hot frosting. “We turned the cinnamon candy into a very thick syrup and emulsified that into our standard white icing,” Bob’s Donuts chef Keri Tull said. “We already had an apple cake donut that we were selling so we used that. The toppings are a syrup that we made and crushed cinnamon candy.”

Different forms of cardiac disease affect people in a lot of ways, and it can lead to serious organ damage, and even death. Junior Campbell Macy’s family has a history of cardiac disease. She bid on a silent auction benefiting Go Red for Women, an organization supported by the American Heart Association. She won the right to design a donut with the help of Bob’s Donuts staff.

The process of making the donut included making an icing from the red hot candy. They used the apple cake donut they already had as the base.

“The first thing we tackled was the icing,” Bob’s Donuts chef Keri Tull said. “The cake donut was a better candidate for the icing we had. The last thing we had to figure out was the garnish. We had the option to put on crushed cinnamon candy or a cinnamon candy syrup we made.”

Campbell decided to design a Candied Apple Donut because her family has a recipe for cinnamon apples. The family has made the recipe every year during the holiday season for a long time.

“My grandma always brought cinnamon apples for the holidays and taught my sister and I how to make them last year,” Macy said. “It’s a family tradition passed down from my great grandma.”

Heidi has been making the apples from the recipe for about 30 years, and she said that they turned out to make a tasty treat. Campbell Macy and her met with the Bob’s Donuts staff to design the baked good, and get advice on how to make the donut a reality.

“We met with Keri Tull at Bob’s Donuts and decided with her guidance that the best option would be an apple cake donut with frosting and glaze decorated with red hots,” Heidi said. “We also talked about the idea of them doing their gingerbread donut (on their usual December menu) with the red hot frosting.”

Good experiences by all of the people involved in the design and construction process of the donut. The Macy family got boxes of donuts for themselves and to share with extended family and friends,

“I think they are really good,” Heidi said. “They will be selling them for a few more weeks yet.”

The donuts are available until December 15th at Bob’s Donuts, located in the Blackstone District.
